About David Rosenberg

David Rosenberg co-founded AeroFarms out of a passionate commitment to the preservation and health of our water and has grown it into a force for environmental good. A serial entrepreneur, David is also the founder of Hycrete, Inc., a cleantech nanotechnology company. He is an active member of the World Economic Forum and a frequent participant in its annual meetings in Davos.

David is an annual lecturer at Columbia Business School and a former adjunct professor at New York University’s Stern School of Business. He competed for the U.S. in fencing where he was a finalist at a world cup, winning three U.S. National Team Fencing Championships and two individual silver medals. David earned a B.A. from the University of North Carolina at Chapel Hill and an M.B.A. from Columbia University.

Ingredients

  • 1 clamshell of Dream Greens Ruby Streaks spicy mustard greens (3.5 ounces)
  • 1 clamshell of Dream Greens Watercress (3.5 ounces)
  • Handful of Dream Greens Microgreens
  • 2/3 cup of Mediterranean olives, halved
  • 1 cup of roasted red peppers, cubed
  • 1 cup of artichokes (cooked, chopped, and oiled)
  • 2/3 cup of feta cheese, crumbled
  • 1/4 cup of olive oil
  • Lemon juice
  • Freshly ground black pepper

To roast red peppers: turn stove burner to high setting. Using metal tongs, place whole red pepper directly on the flame. Using the tongs, turn the pepper until the skin is completely blackened. Remove pepper from heat and place in a brown paper bag. Allow to cool. Once peppers are cool, you can peel, stem, and seed them. Chop into small cubes. Place in large serving dish.

With washed hands, add Dream Greens to the large serving dish. Add olives, artichokes, and feta cheese and toss all ingredients.

To make dressing, mix together olive oil, lemon juice, and black pepper to taste in small bowl. Pour over ingredients in serving dish. Toss and serve!
